SPAGHETTI SQUASH

Spaghetti Squash is a fun and inexpensive item to make, eat, and serve. Not to mention, it's very healthy. If you're a carb-lover like me, you'll love this substitute for having pasta.  You can eat a lot, and it's not a heavy carb-load like regular pasta. Spaghetti squash is a great way to encourage kids to eat squash, because it looks like the familiar spaghetti noodle. (let them help you scrape it out).

1. One Spaghetti Squash will make a good family quantity. Reheats well also!

2. Cut stem off. Cut Squash in half, and then in half again. Be careful.....it's
hard shelled.

3. put the cut squash on a baking sheet and sprinkle with salt, pepper, and whatever herbs you like. I put red  pepper flakes on this one.  Sprinkle with some olive oil for good roasting.

4. Cook on 350 degrees for about an hour.

5. Take out of oven and let cool to the touch.

6. With a fork, scrape out the strands of spaghetti squash into a bowl. Scrape it out all the way to the shell.
You can use any sauce you like for your Spaghetti Squash dish. A maranara (tomatoe) sauce is scrumptious. It is also excellent tossed with just some butter or olive oil and then minced garlic sprinkled over the top. I like goat cheese or blue cheese sprinkled on it. Your imagination is all you need to add the flare! It is an interesting and fun food to make and serve your family and friends. You will feel like you're splurging on spaghetti when you're not......not really. Be Happy Be Healthy!

The fish in the above picture is Cod. I am serving it with the Spaghetti squash and Basmati rice. I used the oven time to cook the Cod along with the squash. This is the easiest way to cook fish!

Take any fish you like and put it on a piece of Aluminum Foil. Put a few spoonfuls of salsa on it with any herbs you like. There is garlic & butter included here.  Wrap the foil up around the fish and cook in the oven 350 degrees for about 1/2 hour. The salsa will add so much flavor to your fish, and the sauce can be used to compliment your sides. A rice cooker adds a lot of ease to your preparation.
